Hey!, we’re Jamie and James, the hearts (and hands) behind The Sycamore, The Oaks, and The Stays.
We didn’t start this with a grand plan, just a shared dream to create places that felt like home. Where the food’s generous, the welcome’s real, and the vibe’s just right. The kind of places we wished existed… so we built them.
Over the years, we’ve ticked off a lot of places from Lincoln, London, Dublin and Sydney, and between us, we’ve worn a lot of hats, including NHS nurse, culinary creator and hospitality pro. And along with Trigger, our four-legged family member, we've poured our hearts into being possibly the most enthusiastic Super Hosts you’ll ever meet.
What ties it all together is people.
We love making sure everyone who walks through our doors leaves a little lighter than when they arrived.
OUR STORY
2021
The Oaks began life as a humble ice cream shack in the middle of lockdown. It was cold, uncertain and a bit wild, but it gave people a reason to come out, connect, and smile. We made coffee and hot chocolates through the hatch while everyone was 2 metres apart, and somehow, it felt like exactly what the world needed.
2022
The shack grew into a café, then a kitchen, then a full-on events and food destination. With sweeping views of the countryside, an ever-evolving menu, and space to stretch your legs (human or hound), The Oaks quickly became a local favourite, a place for everything from post-walk fry-ups to family fuelled gatherings.
2023
The Sycamore was our next leap. A gorgeous neighbourhood spot where dogs are welcome, the brunches are banging, and the craic is top-notch. It’s the heart of the West End, a place for community, connection, and an absolutely banging roast.
We also launched The Treehouse upstairs, a peaceful bolthole nestled in the branches, perfect for luxury mini-breaks and special stays.
2025
We hit a milestone and we officially purchased The Sycamore. No longer a lease, but a legacy. A forever home for our vision.
We also expanded The Stays..
The Maple House - a beautifully refurbished turn-of-the-century terrace backing onto the West Common.
Linden Lodge - a calm and stylish 3-bedroom stay near the Cathedral Quarter.
All with that signature blend of home comforts, thoughtful design, and warm hospitality.
WHY THE TREES?
Every branch of our business is named after a tree because it symbolises what we’re building... a rooted, growing, flourishing family of spaces, all connected but with their own character.

The Oaks sits on a site lined with ancient oak trees, just outside the city.

The Sycamore is surrounded by sycamore trees on the West Common.

The Treehouse is tucked up above The Sycamore, wherever you look, you see leaves, branches, and sky.

The Maple House is a grand old terrace framed by a beautiful maple tree.

Linden Lodge takes its name from the linden trees around Lincoln Cathedral (and it’s a little wink to Lindum, the old Roman name for the city).
